Tomato and Basil Harvest - Recipe

Oh the tomato, how I love thee ...
What a wonderful time of year for produce. Especially tomatoes. I love them, and this time of year I usually eat them in some capacity daily. Though I am not a gardener, I still manage to have a bounty of fresh picked tomatoes thanks to family and friends whose gardens are bursting with them right about now. Basil too (which go together like peas and carrots). Obviously there are so many ways to eat tomatoes and this is my current favorite (my daughter's too).


Tomato basil bruschetta

The Players:

2 Ripe Tomatoes
2 cloves of garlic
Small bunch of basil
Extra Virgin Olive Oil 
Salt (kosher)


So the first thing I do is slice the tomatoes in quarters. Like this:

Then I prefer to scoop out the seeds; but leave in if you like them. 

Next I use my favorite slicer (1 second slicer) and in 20 seconds I have perfect cubed tomatoes. 

Once that's all done, I add it to a bowl and drizzle with EVOO, salt, thinly sliced basil strips, and a couple cloves of garlic (I like the frozen kind you just pop out like ice cubes). 

Now depending on what kind of bread you like, get those grilling. I use an indoor George Foreman grill. I brush a little EVOO on the bread and grill those up. 

My daughter loves ciabatta rolls and so do I, but opt for multi grain sandwich thins because  lets face it, I'm 40 and bread goes right to my hips. 

Then I top the glorious mixture on top of the toasted breads and grate some fresh cheese (love my microplane) on top and a drizzle of balsamic glaze (daughter opts out of this). 

Heaven on earth. I can eat this for all three meals!
